Often when I’m working home I like having something quite quick and easy for lunch. Something that doesn’t make me feel tired, it’s the worst thing in the afternoon, not having energy and needing a nap. I’ve learnt that this is a true power lunch for me, and my favorite one at the moment: avocado toasts and protein smoothie. Decided to take a couple pictures of it today, since Bloglovin has decided to label my blog under a food tag, I’m really fitting the picture right now.
All you need to do to prepare this, is put a couple slices of rye bread in a toaster, after toasting put some butter and slices of avocado and tomato, then top it with herbamare seasoning salt and basil. Well basil is optional. But the combination of bread + avocado + tomato + seasoning salt = pure deliciousness. The smoothie I made of soy milk, vanilla protein powder, strawberries and half a banana. All ingredients in a blender and then into a pretty glass and top it with cocos flakes and berries.
Usein jos päivällä tulee kotona tehtyä vain hommia, en jaksa mitään kovin monimutkaista lounasta väkertää, vaan jotain suht helppoa ja nopeaa. Ja tärkeimpänä, jotain raikasta ja monipuolista, joka ei aiheuta iltapäiväväsymystä ja nuutunutta oloa. Tänään päätin ottaa pari kuvaa mun tämän hetkisestä lemppari”lounaasta”, jonka olen havainnut mulle juuri sopivaksi. Paahdettuja avokadoruisleipiä ja smoothieta.
Tosi helppo tehdä, ruisleipiä vain paahtimeen, päälle vähän voita ja avokado- sekä tomaattisiivuja, sitten vähän herbamare yrttisuolaa ja basilikaa. Basilika nyt ei niin tärkeä ainesosa, mutta ruisleivän + avokadon + tomaatin + yrttisuolan yhdistelmä, ah jotain niin hyvää. Smoothien tein soijamaidosta, puolikkaasta banaanista, mansikoista ja vanilja-proteiinijauheesta. Kaikki vain blenderiin, sitten nättiin lasiin ja päälle kookoshiutaleita ja marjoja!

Tää leipäkombo lähti heti kokeiluun:D Olis ihanaa saada lisää reseptivinkkejä, meinaa se ikivanha kalavuokaresepti (mihin tuli juustoa, kalasiivuja, mozzarellaa, makaronia yms..) on mun ehdoton lemppari ollu jo pitkään! Your lunch seems yummy! When I want a light but energizing lunch I like having veggies wrap! You can put everything on it: salad, cucumber, tomatoe, avocado, carrots, alfalfa…! I add a little bit of coconut milk, spices and that’s all! Hope it’ll help 🙂

Hi Marianna 🙂 reading this, I really think I should stop cooking right after university… now that I have to study for my exams, it would be much better to not be tired and lazy in the afternoon :/ and since I LOVE avocado, this is a perfect option for lunch. I’ve just recently spotted a quinoa-salad recipe on youtube, also including avocado, and it didn’t sound too complicated. Maybe that could be an option for you, too 🙂

Have you tried baked avocado with egg in the middle? Avocado is my power food, I love it so much on everything. I also love balsamic and chicken, especially if it has been cooked and soaking up the balsamic in the fridge.

Ever tried Green Smoothies ?
Basically, you use fresh spinach leaves for example, and add : coconut milk, half a banana in small pieces (if it’s frozen even better, so your smoothie will be a bit cold), chia seeds, coconut flakes, and some water.
That’s what I did the other day and it was really yummy.
You have also a lot of variations, like you can add protein powder, or red berries (frozen or not), kale leaves instead of the spinach, etc.
But I like to use frozen bananas, whenever I have a banana that is turned brown, I just cut it in pieces and put in a bag in the freezer, so then I can use it whenever I wanna do a smoothie.

I just found your blog, so first I must say I love it! Toast, tomato & avocado is one of my favorites! My smoothie differs a little, I use almond milk and a touch of peanut or almond butter, so good. One quick go to for me is making a quiche ahead of time, or using 2 egg whites, 1 or 2 eggs and cooking them up quick with a big handful of spinach, then I top with sliced avocado. I make a veggie chili and now love avocado on it also.
